Apparently, there are over 350 different types of pasta. We are all guilty of going for whichever one we have to hand but depending on your dish some will work better than others. Conchiglie is great as it has those ridges on the shell outer and a little cavity in which to catch lots of sauce. A vivid green pesto sticks well to spaghetti strands but we’ve been told by the teenagers that good old spaghetti is a no-no when it comes to first dates
