Quick Stovetop Popcorn

We seem to have been mentioning popcorn a great deal recently. In last weeks Facebook Live we suggested Sumac as a great topping for popcorn. The cheapest and easiest way is to make it on a pan on the hob.

You can get the kernels from just about anywhere - we got ours from Holland and Barrett

Measure out 40g of Popcorn kernels. If you are using a topping have this ready and you want to pop it over the popcorn when it is just cooked

1 Heat the oil: Heat 3 tablespoons of rapeseed or sunflower oil in a 18cm diameter (approx) thick-bottomed saucepan on medium high heat.

2 Put 3 or 4 kernels into the oil. Wait for the popcorn kernels to pop.

3 When the kernels pop, add the rest of the 40g of popcorn kernels in an even layer.

4 Cover the pot, remove from heat and count 30 seconds.

5 Put the pan back on the heat and the popping should start soon. Shake the pan occasionally if you can allow a little steam to escape and this will make for crispier popcorn

6 Once you are only hearing a pop every few seconds, remove the pan from the heat, remove the lid, and pour the popcorn immediately into a large bowl.

In our Facebook Live on Jan 21st 2021 we discussed using SUMAC as a popcorn topping. Why not give it a go? For sweet popcorn we love a dusting of icing sugar.
